Peanut Butter Pear Chia Pudding
Big news – I decided to branch out from my usual chia pudding recipe for breakfast this morning (I’m really living life to the fullest).
I’m so used to using banana as a base for my smoothies and chia puddings that I wasn’t sure how this would turn out, but the pear was a great substitution. If you have a sweet tooth, I’d recommend adding a few dates because it is less sweet than the banana versions.
I really can’t say enough about chia pudding for breakfast – nothing keeps me as satisfied. I wouldn’t say I’m even necessarily a pudding-type person. If you’re holding out because you feel like its kind of a random thing to eat (like I did), just try it. I think you’ll be glad you did.
Peanut Butter Pear Chia Pudding
Ingredients
- 1 pear, cored & cut
- 1-2 Tbsp unsweetened peanut butter
- 1 cup unsweetened almond milk
- 5 Tbsp chia seeds
- optional: 2-3 dates (for added sweetness)
Instructions
- Blend in a blender or food processor, transfer to a container & let sit overnight.
- In the morning enjoy as is or with your choice of toppings.
