Blueberry Almond Chia Smoothie

This is a smoothie I’ve been making regularly.  It takes next to no time and tastes great.  As long as you drink it cold, you can’t taste the spinach at all.  I really want to be the kind of person who loves the taste of vegetables in juice form, but I just can’t.   So I can pretty much guarantee right now, if I’m posting a smoothie with any vegetable in it – you won’t taste it.  I keep a bag of pre-washed spinach in the freezer along with my frozen berries.  This way I always have it on hand, and the more frozen ingredients the better as it keeps the smoothie nice and cold.  I don’t have a very powerful blender, and I may or may not have broken two blenders in five years due to overuse, so I don’t freeze my bananas.  If you want to, I’d recommend peeling and cutting each banana into three pieces and freezing in a zip-loc bag.

Unlike a lot of breakfast foods, after having this I’m not distracted by hunger mid-morning.  I think this is likely due to the fat in the almond butter and chia, and the fiber in the chia, blueberry, spinach.  Chia is a really interesting seed, and I’ve got a post on it coming up!  Also check back for a review on the latest evidence surrounding meal-timing (especially breakfast eating) and obesity.

Blueberry Almond Chia Smoothie

Ingredients

  • 1 cup unsweetened almond milk
  • 1/2 cup frozen blueberries
  • 1 banana 
  • 1 Tbsp chia seeds
  • 2 Tbsp unsweetened almond butter
  • handful of spinach

Instructions

  1. Blend all ingredients and drink cold.
