Lentil Dip
This lentil dip / salsa speaks for itself. I like to serve it with Tostitos Scoops as a snack or an easy appetizer. Its also good on its own over quinoa or greens, to make a light lunch.
Lentil Dip
Ingredients
Dressing
- 1/2 cup EVOO
- 1/2 tsp lemon juice
- 1/2 tsp cumin
- 1/2 tsp cinnamon
- 1/4 cup red wine vinegar
- 1 tsp Dijon mustard
- pinch of cloves
- salt & pepper to taste
Dip
- 1 can lentils
- 1 red pepper diced
- 1/2 cup raisins (optional)
- 3 green onions
- pinch of sugar
- 1/3 cup shredded carrots

- drain & rinse lentils
- whisk dressing ingredients
- combine dip ingredients
- toss dressing & dip
