I’m not sure if you were able to tell from the length of my last post, but I am in full-on vacation mode. I’ve saved up some recipes from when I was home to share with you every Friday and, in the spirit of the summer holidays, today I’d like to share my Morning Mojito with you.
This is cool, light and refreshing – perfect for a light summer breakfast (add a protein source on the side, please!) or for cooling off in the heat. Its packed with spinach but the sweet pineapple, cool mint and tart lime are the flavours that shine through. What are you waiting for?
- 1 cup chopped frozen pineapple
- 1/2 lime, peeled
- 1 cup spinach
- 15 fresh mint leaves
- 1 cup water
- Blend all ingredients together and enjoy!
