Italian Wedding Mason Jar Soup

With the weather getting colder, it’s nice to get to enjoy the warmer, heartier meals like soups and stews that you don’t always feel up to in the summer.  This quick, clean-eating take on Italian wedding soup is about to change the game.  There is basically no prep involved and you get a delicious, portable, protein and veggie packed lunch.  

Having pre-made, pre-packed lunches is very important to me.  It’s so much easier to keep your healthy lifestyle on track when your delicious, ready lunch is right there in front you.  Making decisions for what you are going to eat at the beginning of the week helps us to make better choices, as you don’t succumb to temptations in advance.  

Of course you don’t have to make this in a mason jar, I just like the portability.  I’m worried about putting sous into a tupperware due to spillage concerns, and thermoses generally don’t hold enough to actually fill me up.  This would also be a great throw-together dinner, although I do find it tastes better after sitting overnight to let the flavours blend.  This recipe serves 1 (very hungry) person.

Italian Wedding Mason Jar Soup

Ingredients

  • 8 leaves kale
  • 1/2 cup cherry tomatoes, halved
  • 1/4 tsp thyme
  • 15-20 mini meatballs (about 6 oz / 170g meat total)
  • 2-3 cups chicken broth
  • 1/8 cup parmesan cheese shavings

Instructions

  1. Wash kale and cut out any thick ribs. Cut into thin ribbons.
  2. Add kale tomatoes, thyme, meatballs and chicken broth to jar and top with parmesan cheese shavings.
  3. When ready to eat, pour into microwavable safe dish or pot, heat and enjoy!

The soup is best made the night before, to allow the flavours to meld together overnight; just pour into microwave safe bowl and microwave to heat the next day.
